Niigata Meijo is located in Ojiya in the central region of Niigata Prefecture 150 miles north of Tokyo. A fertile valley for rice farming surrounded by snow-covered mountains in winter, the environment is ideal for sake production. They have produced sake for over 70 years, and they have received many awards for their characteristically beautiful, smooth, clean and clear sake.
Environment Around Niigata Meijo
Located in the center of Niigata Prefecture, next to Uonuma, famous for producing Koshihikari rice, Ojiya City has 2m of snowfall every year, and the meltwater seeps underground. This soft, mellow water is pumped up and used as brewing water. The city is rich in water, with Japan's largest river, the Shinano River, flowing through the center of the city. In this land rich in nature, we continue to maintain our cold brewing methods from autumn to winter.
Being an area with heavy snowfall makes it an ideal environment for making good sake, and we are particularly particular about using rice grown in Niigata Prefecture, brewing it slowly at low temperatures, resulting in a smooth, fine-grained sake that you can appreciate with just one sip.
