This humble brewery is located in the valley of Aizubange, a gem blessed with cold winters and clean rivers in the northern portion of the Aizu region in Fukushima Prefecture. The valley's rice cultivation is the crux of their economy, and in order to reflect the interesting terrior of Aibugante, Akebono Shuzo uses 100% local sake rice. Thanks to this, as well as their dedication to small details and brewery cleanliness (all equipment is hand cleaned and dried at high temperatures - any cloth used in the machines is boiled) their sake has a very pure flavor and is highly suitable to enjoy alongside a meal.

Umami of locally harvested rice Carefully tracking growth of rice plants, they grasp the growth of rice firsthand each year and brew sake by taking advantage of characteristics of rice. They trust the power of rice and vigor of yeast. Sake thus obtained grows every season. This is a mechanism of the mother nature. They pursue the ideal that each bottle of sake has individual characteristics that emerges naturally.

What is “Tenmei”?

We express keen sense of the seasons in Japanese sake with the method of 100% rice, superb rice, squeezing unrefined sake in sake casks, “presence and absence of filtration,” and “cool or warm storage.” 

Tenmei is a brand enjoyed with meals with well-balanced umami and sweet and sour tastes. It is brewed with an emphasis on “transparency = clear taste” which is common to all the products.
